Tonight for dinner I made some taquitos. Specifically, Slow Cooker Cream Cheese Chicken Taquitos. That’s a mouthful! But they were pretty easy. You put into your crockpot:
2 boneless skinless chicken breasts
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
salt + pepper
8 ounces cream cheese
1/3 cup water
Let those cook for like, 4 hours, and then shred and put back in the juices for a couple of minutes. Roll a spoonful of mixture into a small tortilla and add a handful of Mexican cheese. Bake at 350 degrees for 10 minutes. Delicioso!
There would be six on the tray, but I ate one as soon as they came out of the oven. These are tasty.
