Brownie Cookies with Cookie Dough Frosting

I still had some leftover cookie dough frosting from making my cupcakes the other day. So I decided, a delicious way to do this was to make brownie cookies, and top them with it. So I made these cookies:

1 18 oz box regular ol’ brownie mix
4 oz cream cheese
1 egg
1/4 cup butter
2 TBS flour

Mix together to make a soft cookie like dough. Cover a cookie sheet with parchment paper. Drop mixture onto prepared cookie sheet by the teaspoonful. Bake at 350 degrees for about 12 minutes. When you pull them out of the oven, drop the cookie sheet to flatten the cookies a little. Then I topped with the frosting, after they had cooled.

My sister Rory and I were talking about how she is currently watching a show that (while I have never seen) I find ridiculous. She does too, but she was refusing to stop watching it. I asked her why she wouldn’t stop watching a show she doesn’t like, and she said she had signed a contract. Of course I asked her for a copy of it, and she presented me with this:

Antenna Topper

With my old car, Echo, I could not have an antenna topper. My antenna just was too big for one, one never fit. Then, I got new car (new car still doesn’t have a name, I’m still working on it) and this car can have one! So when PJ recently went to Disneyland, I asked her to pick me one up, and she did, and it’s amazing:

Beat Beethoven 5K

Today, I ran the Beat Beethoven 5K. Basically, the race is modeled around Beethoven’s Fifth Symphony. The symphony is 32 minutes, and you want to finish the race before it’s over. They play the symphony during the race, so you can hear it at times, depending on where you are. And they have a guy dressed as Beethoven, and he finishes the race in the 32 minutes, so you just have to finish ahead of him. I finished in 26:17 (not my best, but I only learned I was going to do this race on Thursday night so I wasn’t too prepared) and was a little proud of myself. Unfortunately, in my age group, I came in 4th place, dang it. The annoying thing is, I would have been in first place in any other age group! I went and looked at all the times, and I was the 5th fastest girl to cross the line, and 3 of them were in my age group, so that was really unfortunate. I’ll just have to do better next time!

An awesome side effect of doing this race was that I got to see my childhood soccer coach! I haven’t seen him for probably 15 years, if you can believe that. I recognized him right away, and when I went up to him, he recognized me as well, and said that I looked the exact same, dang it! Ha ha I am going to try and take it as a compliment though. We snapped a pic together, to commemorate the good times.

An Epic Selfie

Tonight for my Young Women’s activity, we combined with the Young Men, and played Minute to Win It games. The games were pretty fun, one of them was to hang hangers from each other (probably should explain better), move cotton balls from the table to a bowl with just your nose, stack Oreos on your forehead, stuff like that. Husband and I were on different teams, and we kept sending selfie’s of ourselves to each other, but we added more people each time. When I send the first one, I had 2 girls with me, and then he sent one with 3 guys in his, and then we kept going until this last selfie, when I think I won:

There are 12 – yes, 12 people in this. Husband jumped in this selfie that went to him, but even though we only have foreheads of some people, I’m still counting them as whole. So, I won the selfie contest, and our team won the Minute to Win it games, and it was a victory evening all around!

Labor Day Shenanigans

For this Labor Day, we got to celebrate Husband’s birthday. Since we were out of town for his real birthday, and things were crazy this summer, we finally went today and celebrated. We went stand up paddle boarding at Jordanelle. It was fun, but crazier than the last time I went. This time, it was really windy, so the water was really choppy. I even fell in once, which freaked me out, but I lived, so that’s awesome. I didn’t get a picture of myself on it, but I got one of everyone else, so it worked out.

Husband preferred the sit on his board while doing it. I think because he couldn’t stand up ha ha. After an hour, we headed back home. On the way, we were going through Provo Canyon, and a fire had recently started there, so the road was shut down, and we just sit there, in traffic, for like, 40 minutes until they opened it back. Right before we all stopped, the truck in front of us, who was hauling logs, had a log fall out, and almost hit us. It was by the grace of God that it didn’t hit us and we got out of it all right. I snapped a pic of what we could see of the fire while we were stopped.

It was scary, but at least we got home eventually. Happy Labor Day, everyone!

Brownie Cupcakes with Cookie Dough Frosting

You guys. These that I’m about to tell you about are a revelation. Let’s kick things off. So, to start off, I just did a boxed recipe of brownies, because I am phenomenally lazy. But – to change it up, I added an extra egg, to make the brownies more cake-like. So, make your brownie recipe according to the box, and scoop it into cupcake tins. I did two boxes of mix, and ended up with 24 cupcakes. I baked at 325 (I have a dark cupcake pan, I probably could have done it at 350, but I was experimenting) for probably like, 20 minutes, but I kept adding minutes. I started with 15, added 5 more, and then I think maybe I did two more minutes, and then took them out. After they were cooled, I made this frosting:

1.5 sticks of unsalted butter
1 cup brown sugar
3 cups powdered sugar
2 Tsp vanilla
2 Tb milk
1 cup flour
Mini chocolate chips

In a bowl, using an electric mixer, whip together butter and light-brown sugar until pale and fluffy. Mix in flour then add powdered sugar, vanilla, and milk and blend together until smooth, adding more powdered sugar or milk, depending on desired consistency. Pipe onto cupcakes,and then top with chocolate chips.

These are amazing and delicious and I love them.

Aberford

Husband is currently in the middle of making a video game to be released. He’s been working on it for the last few months, and in a week or so, he’s going to start a Kickstarter for it. I don’t know if everyone here knows what a Kickstarter is, but basically, its when you crowd-fund something, and usually, something is promised to those that help fund it. We’re all crossing our fingers that this is successful, and I really hope it works out, as it’s a great idea. Recently, we got a poster for the game made:
