Miscellaneous Monday

This past weekend, I hung out with a tiny child, maybe 4 or 5? I can’t remember her actual age. Anyway, as we were eating dinner, she turned to me and asked, very innocently, “Genebeef, (yes this is how she says my name) do you have boobs? Because I don’t have boobs yet” I almost died laughing. I told her that yes, I had boobs, and then she went, ok. I’ll get them someday, I just don’t have them yet. The innocence of kids makes me laugh so hard.

I’m in the middle of a 9-12 page paper for my English class, and I am hating it. I hate writing I hate papers. I hate this English class. For some reason, my teacher seems to think that our class time is supposed to be just us students teaching each other. She actually rarely has done anything for us. Mostly, she tells us how a paper is supposed to be, and then we spend the next few weeks writing it, but we have to bring it to class in increments, so that people can give us input. I understand that input is good, but the amount of time spent working with other students in this class is insane. I genuinely can’t figure out if she doesn’t know how to teach this or just thinks that we freshman/sophomore writing papers can teach ourselves stuff. Ugh. Anyway, wish me luck on this last paper, and then I’m done with writing classes!

Speaking of classes, I only have 1 month left! In one month and 5 days, I will have finished all my finals, and I will be done! This semester seems to have gone by so much faster than last semester, but I think that’s because I only hate 1 class this semester, instead of the 2 I hated last semester. I enjoy my classes, and they don’t seem too hard, which is nice, because I’m only working hard on one class at a time, it seems, instead of many classes at once. I’m hoping this last month will fly by, and weirdly, I have spring break right in the middle of it, which is so annoying. We’ll go on break, come back and have 2 weeks left. Hopefully the break won’t break my stride, and I can finish strong.

Twix Brownies

Ok, as usual, I spent my Saturday evening baking. I chose some delicious Twix brownies, and they did not disappoint. Ok, recipe:

First of all, make just any kind of brownie recipe, whether it’s a family favorite or a box (I just chose box, because the brownies are not the centerpiece. So, make your brownie pan (9x13) and let them cooool completely.  And then:

Shortbread Layer:
1 (10 oz.) box Lorna Doone's Shortbread Cookies
6 oz. cream cheese, softened
½ cup sugar

Place cookies in a food processor until fine powder. Mash in cream cheese and sugar until mixture is well combined. Press shortbread mix evenly over cooled brownies. Directly after this, we’ll add some caramel.

Caramel Layer:
I just have a big ol’ block of caramel from Gygi, so I chopped 14 ounces off of there, melted it in a saucepan with 2 TB of milk, and then poured it evenly over the shortbread layer, being careful not to mess up the shortbread. And then, I threw it in the freezer for like, 20 minutes, to harden the caramel. And then:

Chocolate Layer
1½ cups milk chocolate chips
½ cup semi-sweet milk chocolate chips
1 Tablespoon butter

I put those ingredients in a saucepan, and melted them together, and then poured it over the caramel, spreading it. And then, put back in the fridge to let it harden together, yet again. So, this has to be kept in the fridge, because the cream cheese of course has to be kept cold, and te caramel will flow freely if not chilled, so just FYI. But here’s what it looks like:

Ok, baby had some confusing times this week. First of all, he was sat down with some baby toys, but didn’t know what to do.

Miscellaneous Monday

So today, I got my math test back, that I took on Friday. I only missed three questions, which isn’t bad, but then the curve was two points, so I only missed 1 point for my final score! Yippee! As we were going over the test, there was one answer that I literally had right on the sheet that I worked out the answers on, but then I chose the wrong answer on the test portion! Dang it to heck, me! But I’m still proud of it. Now, I don’t have any more tests in this class until the final. I don’t know if this is good or bad, to be honest. It’s good not to have to stress or super study, but then, I won’t know for sure if I know the material until it’s too late to matter! So wish me luck for the rest of the semester, guys!

Today, for no reason in particular, I decided that I should delete a lot of the pictures on my phone. I have many pics on there, and many of them don’t necessarily need to be on there, since I already have them on my computer. So I took the time and deleted upwards of about 1,000 pictures. It took a long time, to get it all deleted, and choose what to get rid of and what to keep, but then, miscellaneously, the amount of gigs that is occupied by my photos didn’t move at all! It stayed the same! I am calling shenanigans on this. Maybe it needs to reboot or something, but it needs to represent what I actually have on there, because that’s just no fair.

I’m working on my final paper for my English class, and it’s already kicking my butt. It’s going to be about 10 pages, and I have .. 3/4 of the first page written. I know, I have a month still (from today!) to get it written, but oh man, I already have writers block, and already I don’t want to do this, and I HATE writing papers so hard, but I’m going to try and keep my spirits up, and hopefully I’ll get it written quickly, and well. Fingers crossed here.

Weekly Darth

So they styled his hair differently, and I requested a photo. When she laid him down for this, he made this face and was so angry. Then he sat back up, and it’s like nothing had happened. He fake cries, guys! He’s a cheat!

Snickerdoodle Apple Cobbler

Ok I made a super easy dessert tonight, everyone. Here it is:

5 (largeish) apples, washed, sliced
1 package Pillsbury refrigerated sugar cookie dough, pre-rolled
1/2 cup brown sugar
1/2 cup white sugar
3 tablespoons cinnamon
2 tablespoon butter

Preheat your oven to 350 degrees, pretty easy. Ok, slice your apples, and then throw them into a 9x13 pan. Slice/break the butter into chunks, and throw them around the apples. Ok, don’t throw. Gently place them in the pan, randomly. Pour the brown sugar on top of the apples. In another bowl, combine the sugar and cinnamon, and then roll the sugar cookie balls in the concoction. Then, flatten the cookie dough a little bit, and place them on top of the apples. Bake for about 15 minutes, or until the cookies are baked. Serve with ice cream, it’s way more delicious that way. Cherry Cobbler Muffins

Today, when I got done running, I was like, oh man, muffins sound so good! So I decided to quickly make some. I grabbed a cinnamon muffin mix that I had in the cupboard, and after looking at them, I found out, the mix expired like a year ago. Hmmmm I opened it, and it smelled ok, so I gave that a go. Good news, I didn’t die or get sick from them. So I made the mix according to the package, and then I threw about a tablespoon of cherry pie filling onto the batter.

Not bad, and then I threw the cinnamon mix on the top of the cherries. I baked them according to the package, and then brought them out.

They were really tasty! They tasted like a yummy cherry cobbler, so I would make these again, and recommend them to everyone.

An Anniversary Celebration

So, today, if everyone can believe it, is my 4th wedding anniversary! 4 years, holy cow have they passed quickly. And we’re still together! Miracles happen every day. For dinner, we went to fancy(ish) Chef’s Table, and ate delicious (expensive, sheesh) food. Of course it’s not kosher to take pics of your food there, but I snuck a pic of our dessert.

This is a chocolate hazelnut dome, and it’s just as awesome as it sounds. This kind of thing is too fancy for me to make, so it’s fantastic to enjoy. But happy anniversary to the hubby (who doesn’t read this blog) and here’s to many more!

Chatting while Stamping

Tonight, we had stamp and chat, and of course we made amazing cards.

And for treats this month, we went for a green theme, but nobody could bring anything sugar. We ended up with a healthy feast!

We had a green relish dish complete with green ranch, I made some sour-patch grapes. We had some guacamole (which I don’t care for, so I ate the chips only) and then a green slush drink that was delish. I ate and ate until I could eat no longer!

Let me tell you how to make these grapes, you guys. You take some green grapes, wash them off. Drain them in a colander, but not too dry, they still need to be wet. So then, take a box of Green Apple Jell-O and pour it out, dry, on a plate. Roll the grapes in the powder until it is covered. Put them in the fridge for an hour until it’s set. Ok, that’s it! It’s so good, they taste like Sour Patch Kids, but they’re healthy grapes! Guys, give it a try, it’s so good.

Makin’ Cards

Ok, I misread the calendar and thought for some reason, that my card swap was this weekend, so I HUSTLED to make my cards, and then I found out the card swap was 2 weeks away. That’s ok, at least I got my cards made, so I don’t have to stress about it later. First of all,
