Last Soccer Game of the Season

Tonight was our last game, guys! We didn't play too well, but you know what, we never really cared about any of that anyway. But after the game, we did some pictures to remember the occasion.




 This is mostly the team we had show up - we had one girl missing this game because she was sick.
I took myself a medal because we had so many extra. We were supposed to have like, 8 kids, 3 on a field at a time, but 2 kids straight up never showed up and then a third came (his older sister was on the team) but he never ever played. So that was frustrating, at every game every other team would be double the size of ours, and they were able to sub their kids and give them rests, which we were just rarely able to do. But that's okay. We kept on going, we did our best, and we finished the season!

Just Being Silly

Today after our soccer game (in which everyone played so great, I was honestly so proud of everyone) we went and got some breakfast because our game was so early. I took a pic of Darth as we were eating and he did a classic Darth face.

Wagon Ride

We took the fellas on a walk today, and since nobody was wearing shoes (these jokers always leave their shoes at home!) we took them in the wagon, everyone piling in.

Probably should have taken a better picture, but hey, we were moving and I just did the best I could. Still a buncha cuties.

Happy Fathers Day

Today we did the annual Fathers Day/Dad's birthday (they're so close - just days apart) fiesta. Before the food, we were just chilling out, and Gecko sure did look like he had cracked open a beer at the end of a hard day.

Then later, I was giving Epifanio some whipped cream, and he did a little shiver after he ate it. I recorded it the second time I did it, hoping he would do it again. He didn't disappoint!

Bear Canyon Bridge Hike

Y'all, I did a beautiful hike today! My cousin and I did the trail at Bear Canyon Bridge, in Sandy/Draper, and it was so lovely!












I recommend this hike, it wasn't too hard, about 3 miles, and it was so much fun.

The Only Way to Keep a Baby Happy

I watched the fellas today, and y'all, it was a good time. Until the baby realized his mom had left, and then he was sooo mad. So turns out, in this case, the only thing that kept him happy was to play with the filters on Snapchat. I happily obliged.

Fellas Shenanigans

Today was my brother in law's birthday, so we all went there for a good time. I have to share the fun videos that we took as we were just hanging out.

Then we went on a walk, and Darth insisted he could hold Epifanio while we walked. I was so nervous to let him do it, but look how cute!

Bread-makin' Time!

Well, as we all have done, during quarantine time I have learned how to make bread. Today I learned how to make an Italian loaf. It was incredibly easy and so delicious! Here is the recipe:

Ingredients

  • 2 cups very warm water
  • tsp instant yeast
  • 1 Tbsp sugar
  • 2 Tbsp vegetable oil
  • 1 Tbsp salt
  • 5 cups all purpose flour

Instructions

  1. Whisk together water, yeast, sugar, oil, and 2 cups of the flour in a large bowl till smooth. Let sit in a warm place till bubbly, about 30 minutes. Add the salt and enough flour to make a soft dough.
  2. Knead a few times on a floured counter till smooth. (if we're being honest, I put this in my mixer with the dough hook) Return to bowl. Cover and let rise till doubled, about an hour.
  3. Divide dough in half and roll each piece into a long loaf about 12 inches long. Place both loaves on a greased baking pan.
  4. Let loaves rise till doubled, 30-45 minutes. Cut a few diagonal slits across the top of each loaf. 
  5. Bake in an oven preheated to 375° for about 30 minutes or till crust is golden brown.

And here they are baked! They were delicious. I think the next bread that I want to tackle is French bread. 

Dolly Parton Chicken and Dumplings

Y'all, I took on a feat today. We decided that chicken and dumplings sounded good. As I was researching a recipe, we came across the Dolly Parton recipe. Since she's a southern goddess and a real delight, we chose her recipe. Here it is, I will not retype all of it:

Here is me, taking all of the chicken off of the bones, because you use an entire freaking chicken. And then here is the chicken after all the bones are out!



 And then here we have the soup as I am adding all the ingredients, and then the soup in my bowl!
Something that I didn't realize until we were mixing the chicken into the final soup, is that the chicken I was using was double the size the recipe called for ... so I definitely had way too much chicken in here haha.
But! This recipe is freaking delicious. I cannot recommend it enough. Make it, it's not even that hard.

Coaching the Polar Cubs

Y'all, I am coaching another tiny soccer team. Technically, my sister is the coach, and then she asked for some help. We had our first game today, a fact I learned just the day prior haha. We showed up with our fellas and we were ready.


 Unfortunately for everyone, we were the only ones that showed! Nobody else of their team did! So we did a 2v2 (the games are only 3v3 anyway, since these jokers are 4-5 years old) and the other team switched out their players every 5 minutes (they had like, 6 players) and our tiny guys played the whole time! They were beat by the end, but they loved it. Nobody kept score, but Darth scored 3 points and celebrated with a dance and a dab, of course. Hopefully we'll have more people show up next time!

To Georgia and Home

Yesterday was spent getting stuff for the house and unpacking, so no pictures took for the day, so sorry to disappoint ha ha. Today, we left Knoxville pretty early and drove to Georgia to fly out. Georgia was a 3 hour drive, but we decided that a three hour drive for a non-stop flight was better than a flight from Knoxville and a three hour flight. Not for us, necessarily, but Texas and Chani were flying with us to Utah to pick up their kids and get right back on the plane, and nobody wants to do that long of a layover with 4 cranky kids, so we made the drive. 

 We couldn't get out of the car for the Georgia state sign (construction + traffic + rainy weather = no thank you) but we still snagged a photo.
At the airport we had to wear masks of course to fly out. Even though Wash didn't need one, we put him in a mask long enough to take some photos and then took it off, but he didn't seem to mind it too much. 

I had such a great trip! I didn't think being in a car for that long would be good, but honestly, we had a blast. I'm still in denial that our family has moved, and I'm sure it'll hit me later. Luckily in this day and age, we have technology to still talk and see each other as much as we would like to.

Road Trip Finisher!

Y'all, we made it to Knoxville! We got there a bit after noon, and then in the hot hot hot hot hot Tennessee sun, we had to unload a giant UHaul truck. Luckily, we had members of their ward come over and help us. We were absolutely soaked in sweat by the end, and I think I had an extra 6000 steps by the end of it.
Wash was just happy to be out of the car after so many days!

Road Trip! Day 3 - Kentucky and Tennessee

Here we continue on the trip! Today is our most exciting day - we are stopping in a city called Ste Genevieve in Missouri! Excitement!

First I grabbed a pic of the sunrise as I was out running. Then we hit the road! 

We made it! It's real! 


 I love this place, what a great town.
 I'm not sure of the order of the towns we went through, but you get the idea.





And then our final destination of the day was Tennessee! We stopped in Nashville for the night, a few short hours of our final destination, Knoxville. Hard to believe we're almost there!

Road Trip! Day 2 - Missouri

We left from Nebraska this morning on our way to Missouri. We went through about 10 minutes of Iowa and would have loved to get a picture of that sign, but due to construction in Iowa, that was apparently not possible. Freaking dumb Iowa, you ruin it. But otherwise, a great day!



Then I was like, hmmm I don't have any pics with Adam, so on our way to get some food, we snapped a pic in the dusk.
 Then I snagged a pic of the sunset, which I really loved.
