Foto Friday

Today, we gave Cookie a slice of apple. She didn't like it. She wouldn't eat it. But she wouldn't put her apple down, because she didn't want anyone else to eat it. What a dang weirdo.

Bell Pepper Nachos

Lately, Husband has decided to go no-carbs. Good for him, good for him. I love it too much, I will never stray from the carb-train. But I have started to make different, no-carb dinners for him. Tonight, I tried out Bell Pepper Nachos, and they were DELICIOUS!! Here's the recipe:

1 pound lean ground beef
1 teaspoons chili powder 
1 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon kosher or sea salt
3/4 cup salsa, no sugar added
1 cup grated cheddar cheese, reduced-fat
3 bell peppers

Preheat oven to 375 degrees. Remove seeds, core, and membrane from bell peppers then slice each one into 6 verticle pieces where they dip down. Set sliced bell peppers aside. Cook ground beef over medium-high heat, breaking up as it cooks. Cook until it loses it's pink color and is cooked through. Drain off any fat. Combine cooked meat with spices and salsa. Evenly distribute mixture into the bell pepper boats, top with cheese. Bake on a parchment lined baking sheet for 10 minutes or until cheese is melted and peppers are hot. 

I snapped a pic of the nachos before the oven, but I forgot to snag one after.

I cannot stress how dang good these are. The meat had a great taste, the peppers were still crispy and so good. I recommend these, guys.

Darth and Gecko

Bubble Adventures

The boys got some bubbles in their Easter baskets yesterday, and couldn't wait to try them out. Darth was just so excited, he had to get out right as soon as I got home from school.

We had to go inside of course, and eat lunch, and have a nap time. It caused a few tears to come in, but he soldiered through.

I'll miss these tykes when they head back home in a couple of days.

Happy Easter!

Happy Easter, everyone! I hope that everyone had a great holiday. I made some delicious treats for the occasion. I made Sno-ball cupcakes. I don't know if you're familiar with the Hostess Sno-ball deserts, but I made them into cupcakes. Basically, it's a chocolate cupcake with a marshmallow frosting, dipped in colored coconut.

They were crazy good, if I do say so myself. That morning when the babies woke up, we had a small egg hunt for them, their first one ever in their whole small lives. They were so dang adorable.

We had dinner at my sister-in-law's house, and it was a lovely affair. Gecko actually had fun, for once.

Workout Buddy

I have an app that I work out to, called 7 Minutes. It's exactly what it sounds like. Darth loves the app. He loves to work out with me, he loves to do the countdown with it. Today, however, as we were working out, he was being needy. He kept wanting me to hold him as I did exercises, and then as I did my pushups, he climbed on my back.

While it is nice to have the extra weight for strength...this definitely made the workout harder. But look at that face, how can I stay mad?

Creeper

Today, as I was working at the kitchen table, I looked up and saw this:

He was just up there, creeping on us downstairs. It is just too cute to see.

Food times

Eating with the little guys has been interesting. Darth is the pickiest eater and only likes a few things, and Gecko literally loves to eat all the food he can get his hands on. We got Darth a grilled cheese sandwich, and I got a salad for dinner. Weirdly though, when we sat down to eat, Darth was so excited that I had lettuce, and then proceeded to eat my dinner instead of his own. My sister snapped a pic as we were sharing.

Then after dinner, we all shared some eclairs. Gecko had a great time with his.

What a great bunch of guys.

Garbage Trucks are the Best

Darth loves garbage trucks. He loves all construction vehicles. Boy things are his favorite things. So this morning, after my run, the garbage truck came at it's usual time. Darth COULD NOT HANDLE LIFE so we had to go outside to watch it pick up all the garbage. He was so excited. After a few minutes, he just had to sit down because it was too much glory to take in.

He just sat and watched like this until it left. What a great morning for a small fry.

A Visit from the Babies

So close to me going to Seattle, my sister and babies are coming here! Our brother in law has recently passed, so she came into town for the funeral. They'll be staying with me, which is just going to be fun, despite the circumstances. Husband and I picked them up from the airport this afternoon, and after dinner, we all took a small walk. Darth had a great time.

I don't know why he was on the ground but he kept saying "cheese" so I knew he wanted a pic taken. What a fella. I hope we have a nice time together these next few days.

Stamps and Chats

This month's Stamp & Chat was as fun as always. We made amazing cute cards, had delicious foods, and loads of laughs. Its just such a fun night! 

Conference Card Weekend

Happy Conference weekend, everyone! I hope that everyone enjoyed the messages shared and had a lovely time. I spent the time of conference making cards as a way of staying awake/paying attention. Even though we just had card swap, I decided to get super ahead and make them for the May card swap. I like how they turned out:

I'm always just so happy when I'm done with my cards, I feel so accomplished.

The Baked Bear

You guys, I have found a new amazing place to eat. It's called Baked Bear and it is in Lehi. (I hear one is coming to Provo, but really can't be sure) It's a cookie/ice cream place and it is DELICIOUS.
Basically, here's what you do: pick the cookies you want, pick the ice cream you want, and they make an amazing sandwich. There is also brownies and donuts to make the sandwich, and I haven't tried them yet. But here is what it looks like:

I just love this place so hard. I went back 3 times in as many days, I just can't get enough. I hope it moves here soon, the drive is the killer!
