Frosting Cupcakes

Last night, I made cupcakes for work. We were celebrating the birthday’s of January, and we thought this an easy thing to do, since we had left the celebration for the last day of the month, naturally. So, I made a plain ol’ chocolate cake for the cake, but then I tried a new recipe for the frosting. The website I took it from touted it as the best frosting recipe ever, one that is used on wedding cakes. So, I was looking forward to using it. After I got everything mixed up really well, I scooped it into my piping bag, and affixed a frosting tip to it.

…And then, this frosting went weird. Even though it was smooth smooth smooth when I was mixing it, for some reason, all of a sudden there were weird little chunks, that I couldn’t get to do anything. So as I was frosting, I kept getting little blurts of frosting, and it made almost every cupcake have an ugly little part. And then, after I got all frosting done, the frosting sort of…fell. Its not that it melted, because the cupcakes were really cool by then, but it just sort of drooped. Needless to say, I was disappointed with this recipe, and I don’t think I’ll use it again. But I did get one good cupcake out of it:

And, for the first time since I got it for Christmas, I got to use my new cupcake carrier, and it was snazzy:

The thing behind it is the lid, and it is awesome. I got it from my sister, and it can hold 24 cupcakes, or you take out those, and it can just hold a cake. So, while the recipe wasn’t a keeper, these were still pretty good cupcakes.

Miscellaneous Monday

On Friday night when I got home, there were packages on the door. For a few minutes, I honestly couldn’t remember if I had ordered things on Amazon and had forgotten them. I sat there for a minute, like, “Did I get drunk and order in the middle of the night?” Finally, I just went to the door and got them. Sadly, none were for me, but there was a post-it note attached to one of the packages that said “FYI, check your rain gutter to the north.” I sat there for a bit trying to think of what this meant. So I went outside, looked at all the rain pipes, couldn’t see anything wrong, and went, “Well, they must have meant something else, la la la”, and went back inside. Then home came Husband and PJ. I showed them the note, and we all went out to investigate. What I hadn’t seen is that the rain gutter on the top of the roof had actually fallen off, so it was half off, half on. We’ve done a temp fix since then, and I will post the pics when we get farther along in fixing it. So far, I don’t like this. Who knew these even fell off?

Husband returned from his business trip on Friday night, and although I would have loved a present of some jewels or something (Yeah, like that would EVER happen but I still hold out hope), he did bring me back cupcakes, from a place called The Cupcakery. Yes, he must know me well to bring them. I got four of them, and I of course didn’t take a pic of them, but I got some off the internets.

They looked really good, and luckily, they have been. I have one more to eat – the Cookies & Cream one, and I know, I should get on it before it gets old and gross.

I found a really weird way of spelling my name, and to me, ( THIS IS NOT MEANT TO BE RACIST) it seems like the way my name would get spelled if it was an African-American that had my name. In all it’s glory: J’Vieve. Fancy, right? I might take this as my new name. I could still get called Vieve, but the J just sounds fancy.

My Café Rio Night

On Pinterest, I’ve seen the recipes to make Café Rio meals, and I’ve never taken much notice. In my brain, I don’t think you can recreate the deliciousness of the Rio in your own home. But finally, I gave it a try, because, wouldn’t it be amazing if it did work?! So, I got all my recipes, and got to work. I found my recipes here:

Now, ordinarily, I would post my recipes, you know this, and pics to go along with it as well. But in this case, I used so many recipes that if I posted them all, this blog entry would be gigantic, plus I don’t have the accompanying pics. In this case, there was just so much going on with all the cooking and everything that I didn’t have time to take pics as we were making it. But let me tell you what I did make: The pork, the salad dressing, the rice. Luckily, lettuce is only something you have to wash and cut, and the tortilla strips, I just bought at Target, already cut. I used a plain ol’ Mission tortilla, that I added cheese to and heated up.

Now, after all the work of all day, and the chopping, the blending, the assembling, finally, my salad was done.

Ta-daaaa! I was looking forward to taking a bite, but also somewhat anxious, in case it wasn’t as good. But I took a bite, and you know what? It was still delicious. It doesn’t taste the exact same, but it is very similar, and still really good. But I’m going to be honest. For the amount of time it takes, and the cost of buying everything, and the sheer amount of work that goes into it, I’d rather just drive over to Café Rio and buy it myself.

Scouts + Ice Cream

Tonight for scouts, the boys earned their Traveler badge. After a week of looking at bus routes, making fake flights and travel plans, tonight, we traveled to the local bus station, to show the boys how a bus route worked in real life, what it looked like, costs, etc. As we were traveling to the bus station, we were talking about it, and that the possibility of seeing a creeper was high. After we looked at everything at the station (and not a creeper in sight!) we made our way down to Macey’s. And yes, we figured out how many miles it was, the gas we were using, etc.

We ordered ice creams for us all, and while we adults got the sensible sizes of the Baby Kongs, the boys all ordered the Ultimate Kong. In case you don’t know the size of that:

That’s a pretty good sized ice cream, I’d say. We sat down for a bit, and ate our ice creams, before we had to get going.

They were all pretty jazzed, I’d say. When we were walking out to the car, one of the boys said something about how it was too bad we didn’t get a badge or anything for the night. Oh, contraire, my friend, I told him, we earned the Traveler badge! His reply back: “But we had fun!” Like that never happens! Now it’s my mission to make every week this fun, even when it’s a boring badge/lesson. As we were getting into the car, a shabbily-dressed man came up to us and asked us for a dollar. As we were shutting the doors, and driving away, one of the boys yelled out “We saw a creeper!” and we all died laughing. All in all, a good activity, a fun night, and I love any chance I have to get ice cream.

Chocolate Chip Coconut Cookie Bars

This was another of those recipes where I started out with such good intentions, and then it ended up not really working as well as I would have hoped. I'll give the recipe first:


Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 1/2 cups semisweet chocolate chips
3/4 cup chopped walnuts
1/2 cup shredded coconut

Instructions:

Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.
In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
Bake 20 to 25 minutes. Let cool before cutting into bars.

So there it is. Now, when I made these, I baked them, and they kept jiggling. So I baked for a bit, then they jiggled, and I repeated that like, 3 times, because it just kept jiggling. Finally, I gave up and just pulled them out. I let them cool for quite a bit, then tried to cut them, and all that happened is they just gloobed (not a real word) all over the place. So I let them hang out overnight and then this morning, they were pretty hard, not chewy like the recipe claimed. Maybe another day I can make them better or something, I'll figure it out!

Miscellaneous Monday

Today, I was chatting with my sister about that "someday". You know, the someday when you're rich and famous, and you'll leave your life behind and live with millions. Anyway, so she asked if when I became famous, if she could be my manager. I said yes, but that I would pay her only 5%. She refused to agree to that, because managers are supposed to get 15%. I said I could find a manager to only work for 5, and immediately asked Chelle, who agreed. Then Rory told me that she had the contract already, and I had signed it, and she sent me this pic to prove it:
See? It has my signature and everything, so I know it'll hold up in court. I guess should I ever need a manager, I've already got one.

This evening, after work, I decided that I wanted to get my toenails painted. And of course I didn't want to do it myself, because I can't do the cute stuff they can do. But I chose blue, since January seems to be a blue month, and snowflakes, naturally.

To add to my things I did today (Husband is still gone, so of course, I'm keeping busy by doing anything I can) I decided to divide up my scrapbooky things by color and put them into tiny craft jars. I only had a few of each, so they fit perfectly

No Snore!

I was speaking with a friend yesterday about snoring. I was lamenting that when Husband is sick, he snores a lot more than usual, loud, and non-stop. I mentioned that I didn’t think I snored, but never had anyone tell me either way, so I didn’t know. She told me about an app that you can get that will record you sleeping, and you can see if you snore. I know it’s creepy, but I wanted to try it! So I downloaded the app, called SnoreLab, set it up, and got going with it. You’re supposed to turn the app on, point it facedown, and sleep like you normally would. Easy-peasy.

When I woke up this morning, I hit the stop button, and looked at the results. It gave me a snore score of zero! YAY! And I went and looked at the graph, and there were no up and down results like I was thinking. Here’s an example of a graph you could have that I pulled off the internet.

Mine had nothing, I thought, until I looked a little closer, and saw a little blip that occurred, around 1:30 AM. I didn’t know what I expected, really, but when I started listening, I was sort of creeped out. It is really weird to listen to yourself sleep, and the small noises you make. I was really nervous that I would hear something awful, like a ghost, or someone else, or something. So I jumped ahead to the time, and…I talked! In my sleep! And I have no idea what I said. I listened to it like, 4 times, and I have no idea what it is. I say something, then pause, say something, pause, one last thing said, and then I laughed. CREEPY it was to me, I was really creeped out.

So now, I know my answer. And while I don’t snore, I do talk, so I guess we all have our downsides of things we do while we sleep.

Just Installed a Doorknob…No Big Deal

Yesterday, I was thinking to myself that it might be a good idea to have my door locked all the time when I’m home. (Well, when I’m home alone.) The problem is, my doorknob sticks. The little bolt deal (yup, this is the language you’ll get here) often doesn’t retract out of the door, so when it closes, nothing catches, so it can swing back open. I decided to put an end to this, and went and bought a new doorknob. I found a darker one – I don’t like gold, and while silver is ok, I like the “oil-rubbed bronze” look, so I went with that. I bought it, and came home, ready to put it together.

I had PJ help me on this. We took apart the old doorknob, and got to work. It took some finagling, and I was worried at points that it wouldn’t work out, but finally, after a lot of work, it came together, it closed, locked, and opened again. I tested the keys to make sure they worked, and yay! They did! So I stepped back to admire what it ended up looking like.

Nice, eh? You can see where the original doorknob must have been a hundred years ago (It certainly wasn’t that type of doorknob when we moved in…) but I’m not itching to get a door, so I’m ok for now. At least I got this one in and didn’t have to bring it back or anything!

Blueberry Cheesecake Cookies

Last night, I made some cookies. Now, don’t anyone get excited, because these were awful. I got these off Pinterest, and I had read in the comments on the website that they turned out flat, so I did what they told me to fix it. I added things, refrigerated longer, etc, and these came out as flat as a pancake, and tastes just like a pancake. Or muffin. Does everyone know what Jiffy blueberry mix taste like? Because this just tastes like a dang muffin that I’ve made and tried to pass off as cookies. Le recipe:

Blueberry Cheesecake Cookies
2 boxes Jiffy Blueberry Muffin mix
4 oz. cream cheese
1 stick “I Can’t Believe It’s Not Butter”
½ C. light brown sugar, firmly packed
2 eggs
1 ½ C. white chocolate chips

Cream together butter, cream cheese, and brown sugar. Add eggs one at a time until blended. Combine muffin mix with the butter mixture and mix well. Fold in white chocolate chips. Chill for at least one hour.

Preheat oven to 325 degrees.
Drop by tablespoonfuls onto greased cookie sheet, 2 inches apart. Bake for 14-15 minutes or until just turning brown around the edges. Cool on cookie sheet for 1-2 minutes. Transfer to wire rack until completely cooled.

These came out flatty flat flat flat. So basically, don’t make this. I don’t even know why I included this recipe, because I don’t think these are even any good. Here’s what they look like:

Weird, right? And they were textured like muffins and tasted like them, so pretty much, just make muffins to enjoy these cookies. Pinterest fail.

1 Year

This week was my scouts Pack Meeting. I won’t lie, I like Pack Meetings better in the summer, because it’s just more fun. Its more fun to go outside and do fun things than it is to meet inside, receive a lecture about something (Ok, not a lecture, it’s like a lesson) and then go home. But as a leader, we go, that’s what we all do. Anyway, so as I was sitting in the pack meeting, they were giving out the awards to the kids, what badges they earned (are they called badges? You’d think I’d know!) etc, and they called my name. I’m like, what? And get up, and I see, they’ve given my my 1 year pin, saying I’ve been there for a year. This is a lie. I’ve only been in there since March. LIES, SCOUTS, YOU’VE LIED, but I don’t know what else to do. Maybe they go by calendar year, and not by literal year. I took a pic, of course

Cute, right? And I did learn a new spelling for my name. Listen, I get that I have a hard name and all, but doesn’t the person giving the awards have access to my records? Can’t they see how it’s spelled? But that’s ok, I’ll do as I do and just make fun of that person in my head. Happy nearly 1 year, friends.

Miscellaneous Monday

GREAT NEWS EVERYONE! My car is fixed! I know, I know, you’re all as excited as me. Today, after much prodding, I finally called Big O to see if they had my part in. He said it was on the way, and should be there within 15-20 minutes. After a bit, I left work early, and scooted on up there. They told me it would take a while, and if I had a way out of there. I said not really, and had a seat. I called Husband, who of course was still at work. and told him I may need a ride out of there. After me waiting for about 40 minutes, Husband came, but about this time, I saw them working on my car, so there was really no reason for me to leave. I waited for a bit longer, and then… they called my name! It was done! Ready! Working! I know, I’m using a lot of exclamation points. I paid my money (more than I was quoted, but what can you do) and drove away, blasting my heater. I was so psyched.

I did another Family craft this weekend. I ended up with a couple of extra wooden block works that say Family. so I decided to give those to family member’s on Husband’s side. After working on it for a while, I finished with this:

Warmth? Not quite.

I have blogged many many times of my car issues. The car is usually fine and I find no problems with it, except for this one thing that has been going on for years now. The heater/air conditioner in my car rarely works. It does for a while, then it doesn't for a long time. This winter, it's been working steadily..until last weekend. It just stopped. It hasn't worked a lick. And with how cold this winter is, it's been SUPER cold in my car. When I get to my destination, I'm freezing. My hands are like ice. And wearing gloves doesn't really help. My feet get cold, it's almost like my shoes and socks do nothing for me. But, I have persevered. I figure, it's gotta get going soon enough, so I've waited. Finally, yesterday, I took the advice that literally everyone has given me, and took the car into Big O to get looked at. The guys said it probably was just the motor blower, and it would be easy to fix, and for not too much money, either. He said it would be a short amount of time, maybe 20 minutes, so I said I'd run my errands and come back.
After finishing my errands, (about an hour) I returned. He said it was getting worked on now, so I just hung out. After 30 minutes or so, I wondered what the heck was going on. Husband, at this point, had left me there, awaiting my car to be finished. After another thirty minutes (its four at this point, the closing time of Big O) and the guy came over and said that none of the blower motors that they had had fit my car. They measured, and found one at another Big O, and they were waiting for the guy to drive it over, to see if it fit. After another 15 or 20 minutes, the guy called me over to the desk and told me the new arrival didn't fit either. After all this working and waiting, none of them fit. They told me they'd be calling the dealership on Monday, and hopefully they could get one in that day or the next day. I was so disappointed! My car was nowhere closer to being fixed! They also told me that they had taken apart the dashboard, and to make it easier when I came back, they left it apart, and told me not to lose any of the pieces there. I agreed, and went on my way.
On the drive home, it was COLD in the car. The dashboard being missing meant that there's no barrier between the outside and the inside, so the cold air is just blowing right into the car, so the 10 minute drive home left me with ice hands and just chilly. I took a pic, of course.
So now, I wait. I'm not driving the car this weekend if I can help it, and I'll make sure to bundle up when I drive to work on Monday. And I am hoping they'll get the right piece by then!

A SNOW-Y Craft

Craft club has struck again! This months is especially cute. I think I say that every month but it’s always true. This one seemed to give us a bit of trouble. There was something about it, we had bad luck at every turn. But we soldiered one, and finished a magnificent craft.

CUTE, right? The snowflake in the middle there, we painted it, and immediately put glitter all over it, which was easy and yet, difficult. to hurry while it was wet, and evenly get it everywhere. When we finished, it was almost like a sigh of relief, we didn’t ruin anything. (We just had some paint spillage, soda spillage, kept knocking over our letters…holy cow) Naturally when I got home, I put it up.

Stamping Mini Cards

This week was Stamp & Chat, huzzah! This week was a little different than previous weeks. Instead of our 3 cards, we made 4 mini ones. Chelle had made these little magazine holders for the cards before we got there, to hold our little cards. So, here are the cards:

Come on, how awesome is that?! I’m glad the holder was already made though, because when the making of it was run down, I knew I wouldn’t be able to do that by myself. We ended the evening with root beer floats which were super delicious. Happy stamping!

Mason Jar o’ Fun

For the year 2013, I have vowed to have more adventures. Since I’m such a sissy with everything, I usually turn things down, and don’t want to do things. Let me specify. Husband is very outdoorsy, he likes to river raft, and all sorts of things like that, and I don’t care for things like this. I don’t want to die, is all I’m saying. So I promised him and myself, that I would do more adventurey things this year. After I said this, I saw a thing on Pinterest that is going to help me keep track of things.

What you do, is take a mason jar. A plain ol’ mason jar, and every time during the year you have a great experience, or a memory of any kind, you write it down and put it in the jar. Then, on New Years Eve, you take it out, read all the slips, and have a walk down the memory lane of the previous year. So, I thought this was a great idea, and I decorated this jar:

Now, I know that you’ll notice right away that it’s sort of sparse, and yes, that’s true. I couldn’t really figure out exactly how to do it, so I just kept it small. And I ran of out sticker 2’s, so I had to substitute a Z for it, but I think it works. And Chelle helped me cut out small pieces of paper, so I could have them right next to the jar, should anything good happen. I put it out on the mantle:

Birthday Cards

This upcoming weekend (Saturday, specifically) is a meeting of the minds. The Card Club is meeting up again, so naturally, I had to come up with 2 cards on my own, one following the format. It was birthday cards for both of the cards this month, instead of being different, and that worked with me. So, without any further ado, here are my cards:

I like the cupcake one, but I’m still on the fence about the balloon one. It’s not as cute as I originally hoped it would be. But I’m sticking with it, so there’s that. When I thought of the cupcake one, I didn’t anticipate the difficulty in cutting out each cupcake with the candle and everything. They were originally a scrapbook paper that I just cut the individual ones out of. Worth it, though I like it!

Miscellaneous Monday

This weekend was one that I spent indoors, mainly because I had craftin’ that needed to get done. (More on that in another blog post). So, I spent most of it watching TV while I worked. Husband joined me for most of the time, and we got caught up. I mean, totally, on TV shows. Since it’s been Christmas and New Years, shows haven’t been new, so we finished them all. We finished the last show on Sunday, at 6:00 PM, so I had one glorious hour to be caught up before stuff started again. Say what you will, but that was the most freeing hour I’ve ever had.

I got a gift card to Amazon for Christmas. It was awesome, I got to choose so many things to buy with it! One of the things I bought was a pair of running shoes, mine are needing to be replaced soon. I scoured the pages, and debated the colors, and finally settled on a red pair that looked awesome. When they got to me a couple of days later, I was surprised to find out that they were more pink and fuchsia then they are red.

Do you see what I’m saying? Its not that I hate the shoes now, but I am a little sad over it. I wish they were red.

Husband finally had his work Christmas party this past Thursday. You read that correctly, we had it on January the 3rd instead of at Christmas. All in all, it was a pretty good time. We had set up video games throughout the building, and board games as well. A small (8 years old) girl hung out with us, and she played Shrek Super Party with us (BEST GAME EVER) on the GameCube. When the evening was over, and her parents came to collect her and her brother, they thanked us for watching them. I didn’t say my next thought out loud which was, “I was watching them? Was I in charge of them? Because I didn’t do anything for that at all.” Instead, I told them it was no problem, and they left on their merry way. Shouldn’t parents notify when I’m watching their kids, so I know what’s going on? Seems safer for us all.

Yesterday, I was “let go” from visiting teaching. Now, normally, I don’t do well with visiting teaching. I’m too awkward and shy to go to a strangers house to talk to them, and I’m awkward when strangers come over to visit me, so usually, I avoid it. After a year of me not going, the RS president came to visit me, to see what was up. When I explained the shyness and awkwardness. she suggested I take a while off, and then we’ll revisit this in a while, and see what my feelings are then. I don’t know how I’ll feel then, but for right now, I like it.

Foto Friday

Today, as I was driving to work, on a completely normal day, I look over and see:
That's a snowman. A giant, real, made out of snow snowman. At first when I looked at it, I was like, oh that must be an inflatable thing or something. But then, I returned this evening to take a look at it, and there it is, a snowman. I took the pic that night (No time on the way to work) and then heard about it from the neighbors a little. They worked on it a lot, and took all the snow in the yard, and got it up. I'm pretty impressed with it, holy cow. That must have taken a lot of work. Good for them, and way to use the snow in a positive way!

Home Sweet Home

A looong time ago, I saw a cute craft in a book that I wanted to try. I ordered the materials for it, and sadly, they were on back order. As it neared my mom's birthday, I thought, I should make this craft for her too, and then we'll be twinsies! So, I ordered another set to make it, and...that also went on backorder. Sadly, the order didn't get here in time for my mom's November birthday. I told her so, apologized, and promised she'd have it as soon as I got the supplies. The supplies finally made it here a couple of weeks before Christmas. Because of my Christmas crafts I was doing as gifts, sadly, the birthday craft got put onto the backburner. Finally, last Sunday, I had time, and thought, I am doing this. After about an hour or so, I was finished!
Cute, right? I was so pleased with myself. After I finished, I still had it on the table and I thought, I should go get ready for my meeting. Right then, my nose decided to have a WICKED AWFUL nose bleed, and it was bad. It was running down my arms, it got all over my WHITE shirt, and my pants, and the table...the floor, everywhere. As I saw my blood dripping onto the carpet (Husband couldn't hear me shouting for him, apparently, and I was in no condition to walk with this dripping) I reached for the water bottle on the table, to apply some water to it. As I reached for the bottle, I knocked it over, and it dumped ALL OVER my newly finished craft. I won't lie, I just started to cry. (SISSY) So I told my mom I wasn't ready yet, and started anew.
On Wednesday, I had some time, so I made a new one, and I think it turned out pretty good.
Not bad, eh? I was pleased. But I didn't get to my mom's yet (I was planning on going on the weekend, but I was smart, and as soon as I finished it, I moved it to another table, to keep it intact. Then, tonight, I thought, I should make mine too, I have time right now, so I settled in again. The more I make this craft, the better and quicker I get at it. Here's the final one:

Happy New Year!

Happy New Year, my friends! Now, it is finally January 1, 2013. After a rousing evening of board games, in which I kicked butt at Scattergories (my favorite game of all time) and was introduced to Bananagrams (a surprising amount of fun, I recommend this game to all) I welcomed the new year, and then went to sleep. But as it is the new year, and as one would say, a new beginning, I've decided to take the opportunity, as have most people, to try and better myself in 2013. A few of my goals are:

1. To make myself more aware of, and thus save, the money I spend. So many times, I just buy things without thinking, and I need to stop this, and change it. Its not that I'm saving up for anything big or anything, but I think I should have money saved up in case I need it. I hear that's important.

2. I need to be healthier. I don't think I'm at the bottom of the heap, health-wise or anything, but I feel like I need to make better food choices, and possibly be more active. I mean, I get that I run every day, but I think I should do a little more, and maybe cut out a little sugar. Not all sugars, of course, but I think I could consume less.

3. I'm going to read 20 books this year. Last year, I got like, 16, and that is sad. I wish I was more well read, but sometimes, I just don't have the time for it. But it seems with the Kindle I got for Christmas, I'm reading a little more, because books are more accessible, and are right at my fingertips! So while I'd like to get more than 20 read, my minimum number here is 20.

4. I want to get 250 posts here on my blog. Last year, I had 190 (which is a lot, I know, and I thank you all for reading them) but I want to get a little more. My blog has turned into sort of a journal for me - every year I like to have it printed out to be able to keep in my records, and have a hard copy, so I'd like to record more events, and more things on here, and just keep you guys interested.

Now, I'm not saying that come 2014, you'll see a totally new Vieve. But I think that perhaps by then, you may see an improved one. I hope that if anyone here sets goals, you stick with them all throughout the year. Good luck!
